First, Hopefully Annual, Pig Roast

What a great night, and a great way to raise money for Holy Cross!  The pig roast event that was part of the Celebration auction in January was held on Saturday night. The rain held off, and we had a perfect night under the shade of trees, and lights strewn all throughout the Lindseys’ backyard to light up our evening.  Fun, friends, laughter – what more can you ask for ?!

About 50 people were at the event, to enjoy the pig which Kevin Lindsey gave an 8-hour Latin marination treatment (oranges, limes, lemons, garlic, onion, wine vingar, etc. Yum.) There was an entire buffet of homemade dishes, including Latin cole slaw, macaroni salad, spinich salad, fresh cauliflower salad, cowboy cavier, fresh mango salsa and chips, fresh fruit salad, hot cheesy corn, baked beans,  roasted in the husk corn on the cob, roasted yellow squash and red/yellow/green peppers.

But, that’s just not enough, right?  It was all finished off with a chocolate fountain, to coat homemade pound cake, fresh strawberries, marshmallows and graham crackers.  And of course, fresh lime and mint Mojitos, frozen margaritas, and plenty of beer, wine and water.

Wow.

There was talk of this being an annual event. Make sure you sign up next year — you don’t want to miss it!
